I like to do mockups whenever possible, especially on locations - it helps to distribute to all departments so everyone is working off the same plan, and it's also helpful for me to see the graphics in situ, to understand the space and the story that needs to be told.

A low end Chinese food and wings restaurant in early 1990s St. Louis. I was particularly proud of this one because several people walked into this location and tried to order lunch while it was being prepped.
